Tilapia Matanzas

Serves 4-6
Lake Harvest Tilapia fillets
2 Beaten eggs
100g Crabmeat
75g Softened butter
1 Tbls Lemon juice
1 Tbls Oil
Dash Hot Pepper Sauce
Pinch Salt
Method

Avocados with Shrimps, Caviar or Tuna

Serves Six

3 avocado pears
Half tablespoon lemon juice
100ml crème fraîche
Half tablespoon tomato pureè
Quarter tablespoon aromat, salt
Shrimps, caviar or tuna dill
Method

Sensuous Trout Dip

1 200g packet Claremont Trout Fillets
2 small boiled potatoes
30mls freshly pressed lemon juice
1 tbsp brandy
2 tbsp unsalted butter
1 dollop of crème fraîche
cayenne pepper
black pepper
salt
dash of milk
1 clove of garlic, chopped
Method


Garlic
and Parmesan Bread

700g or 4 cups whole-wheat or brown flour
11/3 cups of oats
½ cup of Kefalos Kefalotiri (parmesan), grated
¼ cup of sunflower seeds
¼ cup sesame seeds
4 garlic cloves crushed with 1 tablespoon of salt
1 tablespoon oil
4 teaspoons dry yeast
5 teaspoons honey
800ml tepid water

Mushroom Risotto
2 tablespoons of oil
2 large onions, finely diced
2 punnets of white button mushrooms, sliced in half
1 cup of cheap rice

Butternut and Kefalos Mozzarella Lasagne

1 large onion, chopped
3 tablespoons of Garlic Butter
1400g of butternut squash, (approx. 2 butternuts) peeled, seeded, and cut into small chunks.
1 teaspoon of minced garlic
1 teaspoon salt
¼ teaspoon pepper, preferably white
2 tablespoons of chopped fresh flat-leaf parsley
4 teaspoons of chopped fresh sage (or half the amount dried)
1 cup of macadamia nuts (4 oz) (optional)
Approx. 6 sheets of no boil lasagne pasta (about ½ a packet)
250g or approx. 2 cups Kefalos Mozzarella, coarsely grated
125g or approx. 1 cup of finely grated Kefalos Kefalotiri (Parmesan)

For Sauce
1 teaspoon minced garlic
3 tablespoons Garlic butter
5 tablespoons plain flour
5 cups milk
1 bay leaf
½ teaspoon salt
pinch of pepper, preferably white

Method


Kefalos Cheddar Cheese and Potato Bake

2kg potatoes
2 large onions
4 hardboiled eggs cut into slices
3 cups of grated Kefalos - Cheddar Cheese
60mls or ¼ cup plain flour
3 tablespoons butter or margarine
1 tablespoon oil
500ml or 2 cups milk
salt and pepper

Method

Baked Claremont Trout (serves 4)
4 Claremont Trout
1 lemon
Salt and pepper
50g butter
Chopped parsley or herbs to taste
100g sliced button mushrooms
1 wineglass white wine
Method


Blackened Tilapia

Serve 4-6 
Lake Harvest Tilapia fillets
2 Tbls Paprika
2 tsp Salt
2 tsp Lemon pepper
1½ tsp Garlic powder
1½ tsp Ground red pepper
1½ tsp Dried, crushed basil
1 tsp Onion powder
1 tsp Dried thyme
200g Butter, melted

Heat heavy pan on high for 5 minutes.
Mix all seasonings in a bowl.
Dip Lake Harvest Tilapia in melted butter and coat with seasonings.
Place fillets in hot pan and cook 3 minutes on each side.


Tilapia
with Marjoram & Lime

Serves 4-6
4-6 Lake Harvest Tilapia Fillets
100g Dried breadcrumbs
2 tsp Dried marjoram leaves
1 tsp Cayenne Pepper
1 Egg - lightly beaten
60ml Olive Oil
2 Tbls Lime juice


Combine breadcrumbs, marjoram and cayenne pepper on a sheet of greaseproof paper. Brush Lake Harvest Tilapia with egg, coat with breadcrumb mixture. Heat oil in pan, and add Tilapia. Cook over medium heat for 2 mins each side or until tender and golden brown. Serve sprinkled with lime juice.  Garnish with fresh marjoram. 


Broccoli
and Three Cheese Calzoni

Whole wheat pizza dough:
1 pkt of Instant Dry Yeast - (10g)
200ml lukewarm water
1 teaspoon of honey
1 tablespoon of oil
½ teaspoon salt
1 cup of whole-wheat flour
1° cups of plain white flour
Filling:
1 tablespoon of oil
1 medium onion, peeled and finely chopped
2 teaspoons crushed garlic
250g broccoli florets, chopped fairly small
Salt and pepper to taste
1 teaspoon of chopped fresh thyme (optional)
¼ cup of water
1 large egg
° cup of Cream Cheese
¯ cup grated Kefalos Mozzarella Cheese
2 teaspoons of grated Kefalos Kefalotiri Cheese
Method


Chilli con queso (chilli with cheese)

One tin of kidney beans
1 onion, chopped
2 garlic cloves, crushed with a pinch of salt
2 tablespoons of unsalted butter or oil.
1 red pepper, finely chopped
1 fresh chilli, chopped
1 tsp chilli powder
1 tsp curry powder
3 tomatoes (skinned and chopped)
1 cup of water
salt and pepper
1 tsp sugar
4 oz Kefalos Provolone cheese, cubed

Creamed Spinach

1 large bunch of spinach(spines removed, washed and chopped)
½ onion, finely chopped
2 tablespoons unsalted butter
2 tablespoons plain flour
1 cup plus 2 tablespoons warm milk
2 tablespoons of freshly grated Kefalos Kefalotiri, or Kefalos Traditional Cheddar
½ teaspoon of salt and pinch black pepper
pinch of nutmeg

Ovenbaked Garlic Chicken

1 chicken, jointed into 8 pieces
4 large cloves of garlic
3 eggs
2 heaped tablespoons of chopped parsley
60g fresh breadcrumbs
40g finely grated Kefalos Kefalotiri (Parmesan) Cheese.
60g butter
4 tablespoons oil (preferably. Olive)
salt and pepper
